35 Meals In 35: #1 Caprese Salad

I saw this on someone's blog that is also going gluten free this year.  This looked so yummy and I just copied it visually a couple weeks later from memory with what I had.  Super simple and super yummy!  I had mine with a piece of gluten free bread.  I made it with a prepackaged Bob Redmill Mix and it was good, a bit spongy, but it definitely gave me the feeling of eating bread.  I actually haven't missed bread too much this last month, and haven't been craving it, so this was the first gluten free bread I tried.  Not much to compare it to.

Caprese Salad
4 Pieces of Fresh Mozzarella (Purchased mine from Costco.)
1 Roma Tomato
Dry Basil
Olive Oil
Balsamic Vinegar
Sea Salt

Just layered the cheese and tomatoes and sprinkled on the basil, salt, olive oil and sea salt.  It was surprisingly good with dry basil but I'm excited to try it again with fresh basil.  Yum.
